Chicken Afghani Karahi is a rich and creamy dish with a hint of spice, infused with the flavors of yogurt, cream, and the spices used in a traditional karahi. A very commonly enjoyed dish in the cuisines of Afghanistan, and this is in turn influenced by Pakistani/Indian karahi style cuisine. Here is how to make this appetizing and decadent chicken dish.
Ingredients:
For Chicken:
500 g chicken (on bone or off bone)
1 cup of plain yogurt
1 2 cup of fresh cream
2 tablespoons of ginger garlic paste
2 3 green chilies (slitted)
1/2 teaspoon of black pepper powder
1 teaspoon of cumin seeds
1 teaspoon of garam masala powder
Salt to taste
2 tablespoons of ghee or oil
Fresh chopped coriander and slices of ginger for garnishing
Instructions:
The Process of Soaking in Spices:
In a mixing bowl, add in yogurt, ginger garlic paste, black pepper powder and salt. Stir to mix well and put in the cut pieces of chicken to coat them well.
It is advisable to allow the chicken to soak in its spices for at least 30 minutes to 1 hour for better taste.
Prepare the Chicken Dish:
In a large karahi (or wok), heat ghee or oil over medium heat. When the oil is hot, add cumin seeds and let them sizzle.
Add the marinated chicken into the karahi and within 8-10 minutes while turning here and there in progression, allow the chicken to turn brown and almost cooked.
Add the Cream:
When the chicken is half-cooked, lower the flame and pour the fresh cream into the karahi. Stir the contents and let it be till the chicken is cooked and water granular gravy turns thick ( about 10 minutes).
Add Spices and Garnish:
Stir in some garam masala powder along with slightly cut green chilies. Let it cook for 2-3 more minutes so that chicken gets all the flavor.
Check for seasoning and add salt if necessary.
Final Touch:Serve hot, garnished with freshest cilantro and ginger cut in thin slices. Accompany it hot with naan, chapati or boiled rice
Tips:
- For an extra smoky flavor, you can give the dish a “dhungar” (smoking) effect by placing a small piece of hot charcoal in a bowl, adding a drop of oil, and covering the karahi for a minute or two.
- This dish is best enjoyed with freshly made bread or basmati rice, which complements the creamy gravy.
